🐥Chick & Chick Sandwich🥪 Wild chickweed and chickpea spread!

This chickpea spread has been my newest obsession 🔥 I used to combine the ingredients separately onto the sandwich, but the day I blended them all together instead and combined all those flavors….!!! 🤤 It’s SO GOOD and I hope you love it as much as I do.

The perfect way to top off this sandwich is by covering it with a bed of foraged chickweed (Stellaria media)! It’s the season - go out & look for some chickweed growing in your garden or nearby natural areas. My village is covered in it! Make sure to follow foraging safety rules 💕 (Learn more in our online Foraging Course.)

Ingredients:
- a can of chickpeas
- A handful of basil 🌿
- 3 pickles
- 7-8 baby tomatoes
- 10-15 capers
- Veganaise (1-2 tbsp. or more, depending on the consistency you want)

Blend these up. Spread on sourdough bread. I got my bread made with local grains & delivered by bicycle from @levain.ch 🥖🚲! Add a nice bed of rinsed fresh chickweed (Stellaria media).

🌿Late winter foraged feast❄️ There’s an abundance of wild food in our chilly forests and fields right now 💛

It’s early March, and these are the plants we foraged to make our wild winter salad and empanadas*:
- Bittercress
- Cornsalad (or mâche)
- Chickweed
- Daisies
- Ground elder
- Primrose
- Wild garlic
- Salad burnet
- Onion grass
- Purple dead nettle
- Lungwort
- Wood avens
- Stinging nettles
- Dandelions

*I’m sorry, I’ve always accidentally pronounced it empañadas and I’m not redoing the audio 🤣🤣

It’s also a good time to find common sorrel, bitter dock, red clover, and plantain.

The empanadas were made with buckwheat, coconut flour, spelt, chia, olive oil and water. And stuffed with our cooked harvest!

💜Purple Dead Nettle Tofu Scramble😋 It’s time!! Foraging for wild plants is about to get ✨wild✨ the next few months.

The purple dead nettles (Lamium purpureum) in my yard are already in bloom and I knew I wanted to make my delicious tofu scramble with them, because they have a lovely mushroomy taste!!

Ingredients:
- 12 purple dead nettle heads (Lamium purpureum)
- 100g firm tofu
- olive oil (for the pan)
- Salt, pepper, turmeric, to taste

Steps:
- Rinse & chop the flower heads
- Smush the tofu
- Mix & add your spices
- Cook for about 7-10 mins in a pan with olive oil
- Enjoy!

🎍Homemade Essential Oil Diffuser with Foraged Bamboo Sticks 🎋

If you come across bamboo sticks or reed, consider foraging a few pieces to make your own aromatic diffuser.

Materials:
Glass bottle or vase with a narrow neck
20 to 25 drops of your favorite essential oil (we use @aromaticsinternational )
1/4 cup jojoba oil
3 tablespoons rubbing alcohol or vodka
Bamboo or reed sticks (4 to 6 inches long)
Gardening Scissors
Small bowl
Small funnel

Steps:
Gather dry the sticks and cut them into pieces 4 to 6 inches long.
Mix the oil and rubbing alcohol or vodka in a bowl.
Add essential oils of your choice to the mixture.
Using a small funnel, fill the bottle 3/4 of the way up.
Place 3 to 6 wooden twigs into the vase so the aroma diffuses into the room.
